Our Beef

Our repeat customers testify, “It’s the best beef I’ve ever had.” We pride ourselves on our beef having three features that matter to us and our customers:

Fresh. Natural. Local.

You may purchase quantities for any size family, freezer and budget.
25 lbs.  package info link
50 lbs.  package info link
150-175 lbs. (quarter)
(avg. family consumes 150 lbs. beef per year)
300-350 lbs (half)

Fresh. Food less traveled.

The benefit of food less traveled is its freshness. We utilize USDA inspected facilities that are within 40 miles of our farm to harvest our beef in a sanitary and regulated manner. Each facility has cooler space to allow our beef to age seven to 10 days before it is cut into steaks, roasts and ground. Aging time allows the beef to relax and naturally tenderize.

To keep it fresh until you are ready to grill, roast or broil, the beef is vacuum packed and frozen by USDA inspected meat professionals in Oneida and Otsego Counties.

Natural. Grass finished.

Over 300 acres of our land lends itself to pasture and growing grass for our dairy and beef herds. Our animals are born in the main barn. They receive milk and fresh water during they are three months old. Then, they graduate to a fresh water, dry hay and “sweet feed” diet. Sweet feed is comparable to beginning a baby on cereal; it fosters the development of their digestive system and is a balanced formula of protein, vitamins and minerals for growth and immune system development.

At six-months old, our animals relocate to an open-air building where animals have free choice on where and when they lay rest and when they eat their hay and drink water. The stalls are lined with sand for animal comfort during their rest periods. During our grazing season (May – October), animals that are one-year old eat grass from the pasture and hay that we put in yard near the barn. Our pastures have wooded areas for shade and plenty of access to fresh water.

Local. Know your farmer. Know your food.

From their first meal of their mother’s milk, our animals reside with us on our slice of Herkimer County grasslands overlooking the Mohawk Valley. Our children, Kayla and Bryce, work alongside family and our trusted employees providing a comfortable home for our animals and contributing to our family business. With confidence, we work with local meat experts to provide beef you will enjoy.
